Position Overview – Captain (Raffles Salon)
The Captain plays a key leadership role within the restaurant team, supporting colleagues and management to ensure the highest standards of service and guest satisfaction. This position requires professionalism, strong communication skills, and the ability to supervise daily operations while maintaining 5-star luxury standards.
The Captain works closely with the Restaurant Supervisor and Manager to oversee service flow, train team members, and ensure guests receive a seamless dining experience.

Key Responsibilities
Service Excellence & Guest Satisfaction
- Maintain and uphold LQA (Leading Quality Assurance) service standards
- Ensure smooth service operations within the outlet
- Read daily reports and acknowledge VIP arrivals
- Deliver personalized, attentive service to all guests
- Present menus, explain specials, and provide detailed information about food and beverages
- Ensure children’s menus and special dietary options are offered when appropriate
- Handle guest concerns professionally and inform management of resolutions
Creating memorable dining experiences is central to this role.
Food & Beverage Knowledge
- Maintain complete knowledge of all menu items, ingredients, garnishes, and preparation methods
- Prepare and serve specialty coffees and teas
- Serve alcoholic and non-alcoholic beverages according to hotel standards
- Demonstrate strong wine and cuisine knowledge
- Support upselling initiatives to maximize outlet revenue
A deep understanding of F&B offerings enhances guest confidence and satisfaction.
Operational Responsibilities
- Utilize POS systems to process orders, close checks, and complete cash-out procedures
- Follow hotel cash and credit card handling guidelines
- Reset tables according to 5-star standards
- Maintain cleanliness and organization of the outlet throughout service
- Conduct beverage inventories and prevent stock variances
- Perform opening and closing side duties as assigned
- Ensure compliance with HACCP, hygiene, and safety standards
Attention to detail and accuracy are critical for maintaining luxury standards.
Leadership & Team Support
- Assist management in supervising daily operations
- Conduct shift briefings and communicate key updates
- Train and mentor colleagues using a hands-on approach
- Lead by example and promote teamwork
- Support other F&B outlets during peak hours

Qualifications & Experience
