Pastry & Bakery Chef (Commis Chef / CDP) – Production Kitchen
Job Overview
We are looking for dedicated Pastry & Bakery professionals to join our high-volume production kitchen. This role is ideal for Commis Chefs looking to grow and Chef de Partie (CDP) candidates ready to lead a section. You will work in a structured environment focused on consistency, food safety, and timely dispatch to outlets.
Key Responsibilities (All Candidates)
- Prepare pastry and bakery items by strictly following standard recipes (SOPs) using digital scales and timers.
- Support daily production of doughs, batters, creams, fillings, baked goods, and finished products.
- Ensure accurate portioning, packing, labeling, and date-coding of all items.
- Maintain high standards of food hygiene, HACCP compliance, allergen control, and cleanliness.
- Monitor product quality including texture, weight, appearance, and taste, and report issues promptly.
- Follow cleaning schedules and maintain an organized workstation at all times.
Additional Responsibilities (Chef de Partie – CDP)
- Take full ownership of a production section from planning to dispatch readiness.
- Prepare and manage daily production plans based on demand forecasts.
- Supervise, train, and guide Commis Chefs to meet quality and efficiency standards.
- Reduce waste through accurate batching, portion control, and smart preparation.
- Maintain production logs and communicate risks related to stock, equipment, quality, or timelines.
Candidate Requirements
Commis Chef
- Minimum 1 year experience in pastry or bakery production (or a strong trainee with the right attitude).
- Comfortable with repetitive tasks and maintaining consistent quality.
- Willingness to learn, follow standards, and work in a fast-paced environment.
Chef de Partie (CDP)
- 3–5+ years experience in pastry or bakery within a high-volume kitchen.
- Proven ability to manage a section and lead a small team.
- Strong time management and deadline-driven mindset.
