Chef de Partie
As a Chef de Partie, you will manage a specific kitchen section and ensure smooth daily operations. You will oversee preparation, cooking, and plating while guiding junior team members.
Key Responsibilities:
- Manage and supervise your assigned kitchen section.
- Ensure consistent quality and presentation of all dishes.
- Monitor stock levels and minimize food wastage.
- Maintain food safety and hygiene standards.
- Train and support Commis chefs.
- Coordinate effectively with other kitchen sections during service.
Chef de Partie – Grill
You will take charge of the grill section, ensuring meats and grilled items are prepared to perfection.
Key Responsibilities:
- Prepare and cook grilled items according to company standards.
- Monitor cooking times and temperatures carefully.
- Maintain cleanliness and safety in the grill area.
- Ensure proper storage and handling of ingredients.
- Work closely with the Head Chef to maintain quality control.
Commis 1
Commis 1 chefs are responsible for supporting senior chefs while maintaining strong cooking fundamentals.
Key Responsibilities:
- Assist in food preparation and cooking.
- Follow recipes and portion control guidelines.
- Maintain workstation cleanliness.
- Ensure proper food storage and labeling.
- Support the team during busy service hours.
Commis 3
This entry-level role is ideal for passionate individuals looking to develop their culinary skills in a professional Japanese kitchen.
Key Responsibilities:
- Assist senior chefs in basic preparation tasks.
- Maintain hygiene and sanitation standards.
- Learn kitchen operations and food preparation techniques.
- Follow instructions carefully and work efficiently.
Commis – Cold Section
Responsible for preparing salads, cold appetizers, and other chilled dishes with attention to detail and presentation.
Key Responsibilities:
- Prepare cold dishes according to recipes.
- Ensure freshness and quality of ingredients.
- Maintain cleanliness of the cold section.
- Support overall kitchen operations when required.
Requirements
- Previous experience in a similar role (Japanese cuisine experience is an advantage).
- Ability to work in a fast-paced kitchen environment.
