The Role – Sous Chef

As a Sous Chef, you will act as the second-in-command in the kitchen, supporting the Head Chef in overseeing daily operations. You will be responsible for ensuring smooth kitchen performance, maintaining food quality, and leading the culinary team during service.

This role requires a balance of leadership, organization, and hands-on cooking expertise. You will be expected to take ownership of your section while contributing to menu consistency and innovation.


Responsibilities

Kitchen Operations & Leadership

  • Assist the Head Chef in managing all kitchen activities and ensuring smooth service
  • Supervise and coordinate kitchen staff during prep and service hours
  • Step in to lead the kitchen in the absence of the Head Chef
  • Ensure all team members follow standard operating procedures

Food Quality & Consistency

  • Maintain high standards in food preparation, taste, and presentation
  • Monitor portion control and minimize wastage
  • Ensure consistency across all dishes served to guests
  • Conduct regular quality checks on ingredients and final output

Inventory & Cost Control

  • Manage stock levels and coordinate ordering with suppliers
  • Monitor food costs and implement cost-control measures
  • Ensure proper storage and labeling of all ingredients

Hygiene & Safety

  • Enforce strict compliance with food safety and hygiene regulations
  • Maintain cleanliness across all kitchen sections
  • Ensure all equipment is used and maintained properly

Team Development

  • Train, mentor, and motivate junior chefs and kitchen staff
  • Foster a positive and productive kitchen environment
  • Assist in staff scheduling and performance evaluation

Candidate Profile

Required Skills & Experience:

  • Proven experience as a Sous Chef or Senior Chef de Partie in a busy restaurant or entertainment venue
  • Strong leadership and team management skills
  • Ability to work efficiently in a high-volume, fast-paced environment
  • Solid understanding of international cuisines and modern dining trends
  • Experience in menu planning and kitchen operations
  • Excellent organizational and time-management skills
  • Knowledge of food safety standards and HACCP practices
