Job Description
Job Overview
A Japanese Peruvian restaurant in the UAE is looking for a motivated Commis Chef to join its kitchen brigade. Japanese Peruvian cuisine, often called Nikkei, blends Japanese precision with the bold, fresh flavours of Peru, and it is one of the most exciting styles in modern fine dining. This role is perfect for a young chef who wants to learn from experienced seniors and grow in a creative kitchen.
As a Commis Chef you will support the section chefs, prepare ingredients, maintain a spotless station and learn the techniques that make Nikkei dishes special. It is an entry-level to mid-level position with real room for development.
About the Cuisine
Nikkei cooking features ingredients such as fresh fish, citrus, chilli, soy, miso, rice, potatoes and herbs. Popular dishes include ceviche, tiradito, sushi-style rolls, grilled skewers and sharing plates. Working in this kitchen exposes you to raw fish handling, knife skills, marinades, sauces and elegant plating that are valued by high-end restaurants and hotels across the Gulf.
Key Responsibilities
- Assist section chefs with daily mise en place, including washing, peeling, cutting and portioning ingredients.
- Prepare sauces, marinades, garnishes and basic cold or hot items under supervision.
- Follow recipes, portion sizes and presentation standards exactly as instructed.
- Handle fish, seafood and meat safely, respecting temperature control and cross-contamination rules.
- Keep your station, knives, boards and equipment clean and organised throughout service.
- Label, date and store food correctly according to HACCP and local food safety regulations.
- Receive deliveries, check quality and rotate stock using the first-in, first-out method.
- Support the team during busy services and take direction from the Chef de Partie and Sous Chef.
- Learn new dishes and techniques quickly and ask questions when unsure.

- One to two years of experience in a restaurant or hotel kitchen preferred; Asian or Japanese cuisine experience is a plus.
- Good knife skills and understanding of basic cooking methods.
- Strong knowledge of kitchen hygiene and a valid food handler certificate, or willingness to get one.
- Ability to work calmly under pressure, including evenings, weekends and holidays.
- Team player with a positive attitude, discipline and eagerness to learn.
- Basic English communication to follow kitchen instructions.
Package and Benefits
Commis Chef packages in the UAE usually include a monthly salary based on experience, duty meals, uniform and medical insurance, with visa support for approved candidates. Some employers also offer accommodation or transport allowances. Confirm the exact terms with the hiring team during the interview so there are no surprises later.
Career Growth
The kitchen career ladder runs from Commis to Demi Chef de Partie, Chef de Partie, Sous Chef and Head Chef. Starting in a Japanese Peruvian kitchen gives you a rare skill set that can lead to better-paying roles in luxury restaurants, hotels and international groups. Chefs who show consistency, speed and creativity are often promoted from within.
Tips to Stand Out
List every kitchen you have worked in, the cuisines you handled and your certificates on your CV. If you can, bring photos of dishes you have prepared. In the interview, speak about your interest in Japanese and Latin American flavours, and show that you respect hygiene, teamwork and punctuality, because these matter most in a professional kitchen.
Why Join a Nikkei Kitchen?
Japanese Peruvian restaurants are among the most talked-about dining concepts in the UAE, and they are always searching for disciplined young chefs. Spending time in such a kitchen strengthens your CV far more than a basic role in a general restaurant. You will learn premium ingredients, refined presentation and teamwork under pressure, all of which can open doors to hotels, resorts and international restaurant groups.
How to Apply
Interested candidates should prepare an updated CV, a copy of their passport and visa status, and a recent photograph, then submit their application through the contact details or link provided by the employer. Apply as early as possible, because vacancies for the Commis Chef position are often filled quickly once suitable candidates are shortlisted.
Use a clear subject line that mentions the job title, keep your CV to one or two pages, and make sure your phone number and email are correct. Be honest about your experience, answer calls from unknown UAE numbers during working hours, and arrive for any interview on time, smartly dressed and ready to show a positive attitude.
