Service in a 1920s Brussels grand café
Most restaurant floors in Dubai start to look the same after a while. Café Belge doesn’t. Walk in and you’re in a Belgian grand café straight out of 1920s Brussels, with Art Deco details, gleaming brass railings, a marble-topped bar and glassware lined up like it matters. Because it does.
The Ritz-Carlton DIFC is hiring Waiters and Waitresses for Café Belge, and if you love proper table service, this is the kind of room where that skill actually gets noticed.
About Café Belge and the Ritz-Carlton
Café Belge sits inside The Ritz-Carlton, DIFC and has been described as the first Belgian grand café of its kind in the region. The menu leans on seafood and Belgian classics, think pots of mussels with frites, oysters and fish dishes, alongside a long list of Belgian beers that are taken seriously. Guests turn up for business lunches, date nights, weekend brunches and celebrations.
The Ritz-Carlton name tells you something about the job too. The brand is known for the motto “ladies and gentlemen serving ladies and gentlemen”, which really means one thing: you’re treated as a professional, and you’re expected to carry yourself like one.
Your day on the floor
- Welcome guests warmly, show them to their table and talk them through the menu, including the seafood and Belgian beer list
- Take food and drink orders accurately and pass them to the kitchen and bar on time
- Serve and clear courses with polished, hotel-level technique
- Handle allergy and dietary questions carefully, and double-check with the kitchen
- Keep tables, glassware and cutlery spotless and reset quickly between guests
- Process bills and payments on the POS system
- Support teammates during busy services and keep your section tidy
What they’re looking for
- Previous experience as a waiter or waitress in a hotel, fine dining or upscale restaurant
- Good spoken English. Extra languages are a bonus
- Solid understanding of table service standards and menu knowledge
- Knowledge of beer or wine is a big plus here, and real curiosity counts too
- Neat grooming, good manners and a calm attitude when it gets busy
- Flexibility for shifts, including evenings, weekends and public holidays
What a hotel job like this can offer
The ad doesn’t spell out the full package, so don’t assume anything and ask directly at the interview. That said, hotel roles at this level often come with things like a uniform, meals on duty and training, and sometimes accommodation or transport depending on the position.
There’s the career side too. A luxury hotel name on your CV carries weight in Dubai, and the skills you pick up on a floor like this travel with you wherever you work next.
Getting ready for the interview
- Read up on Belgian classics like moules-frites, waterzooi (a creamy stew) and carbonnade (beef cooked in beer)
- Learn a few beer styles, such as witbier, dubbel, tripel and Trappist ale. You don’t need to be an expert, showing interest goes a long way
- Practise describing a dish in two friendly sentences, the way you would at a table
- Arrive polished: pressed clothes, clean shoes, tidy hair
- Have a short story ready about a difficult guest and how you handled it calmly
