We are now hiring a Chef de Partie to own a station in our open kitchen. be aware, this is not a hotel banquet kitchen. This is a high-visibility, high-standard level, live cooking environment where you will be watched by guests and judged by your mise en place.

Location: Patchi Café & Boutique – Mall of the Emirates, Dubai (Ground Floor).
Reporting to: Sous Chef.
Contract Type: Full-time,@ years contract basis, permanent.
Immediate start: Yes (visa transfer/own visa or 30-day notice period).

THE SCHEDULE (REALISTIC, NOT ROMANTICIZED)

Salary: AED 3,000 – 4,000
Housing Allowance: Provides
Transportation Allowance: Depend On location

Total Monthly Cash (Tax-Free): AED 4,500 – 5,200

Service Charge (Pooled): Per Month

Skills We Need

At least 2 years of experience as a Demi Chef de Partie or Chef de Partie in a hifgh end restaurant, hotel.

Strong knowledge of at least cold kitchen/pastry/breakfast cooking.

Ability to work in an open kitchen — comfortable with guests watching, photographing, and asking questions about the dishes.

Speak English well enough to take orders from the expeditor and communicate with waitstaff.

Physically fit: stand 8+ hours, lift 20 kg (flour bags, chocolate boxes, other cartons), work in warm conditions according to sections(grill station).

WHAT YOU WILL DO ( REAL TASKS)

If you are assigned to Our COLD KITCHEN (Salads, Appetizers, Dessert Plating)

  • Prepare 8–12 cold menu items daily according to our menu.
  • Plate all cold desserts from the pastry section.
  • Maintain temperature logs: all cold food must be kept at the right temperature.
  • Garnish with microgreens, edible flowers, and gold leaf.

If you are assigned to PASTRY (Plated Desserts & Viennoiserie)

  • Produce 150+ croissants, pain au chocolat, and kouign-amann daily.
  • Plat à la carte desserts: molten chocolate cake, crème brûlée, chocolate fondant, tiramisù,lava cakes and banoffee.
  • Assist the Pastry Chef with special occasion cakes such like (birthdays, special events)
  • Keep the chocolate tempering machine clean and calibrated.

If you are assigned to BREAKFAST / ALL-DAY DINING

  • Cook eggs In different ways (poached, scrambled, sunny-side, basted, soft-boiled, omelet, shakshuka)
  • Manage the griddle and salamander.
  • Prepare Arabic breakfast items: labneh, zaatar bread, foul mudammas
  • Ensure all breakfast plates leave within 8 minutes of order — no exceptions

For EVERY Chef de Partie (regardless of station):

  • Mise en place: Pre-chop vegetables, portion proteins, label, and date everything. First in, first out.
  • HACCP compliance: Change cutting boards by color (red = meat, green = vegetables, blue = fish, yellow = dairy).
  • Ordering & inventory: Tell the Sous Chef when you are low on items. We cant running out of burrata on a Saturday night.
  • Cleaning: Deep clean your station every closing shift. Degrease, sanitize, polish.
