Sushi Chef Position
A position at the IHG Group Intercontinental as a sushi chef plays a major role in the authentic Japanese kitchen. This is a part of Japanese culture. This position requires a highly skilled expert to prepare authentic Japanese dishes, ensuring that every ingredient, portion, and presentation is prepared in accordance with food safety methods and IHG kitchen standards.
- In your day-to-day responsibilities, you will be in charge of portioning and preparing seafood items in accordance with the hotel’s high-quality standards. Preparation of gunkan, gemaki, uramaki, sashimi, sushi rolls, etc., will be on your daily checklist.
- Maintain the quality and freshness of the seafood. Follow international temperature standards and hygiene practices; this is vital here.
- Prepare the sushi rice according to the menu standards and maintain consistent quality by cooking it at the correct temperature, seasoning it without fail, and maintaining its texture throughout the dining service.
- Prepare a large number of maki rolls, chirasi bowls, sashimi, etc., for the buffet service and special events at hotel outlets.
- Prepare the garnishes, sauces, and ingredients. Mise en place will be your major part at the beginning of every shift. Additionally, always keep the sushi station area clean and sanitized.
- Assist the storekeeper, if needed, when goods arrive from deliveries and organize them in the store at the correct temperature.
- Stock reordering using FIFO methods and minimizing waste, adhering to proper par levels.
- Set up the banquet or hotel restaurant live-action sushi station and prepare sushi on the spot for guests in a presentable manner.
- Assist the kitchen staff, including the Chef de partie, sous chef, and head chef, as needed during peak hours.

Required Qualifications
Basically, a suitable sushi chef must complete the following qualifications:
- Broad knowledge of preparing and making sushi, sauces, seasonings, ingredients, cooking methods, flavoring, including skills in knife and fish cutting, preparation of rice, and the authentic Japanese plated presentation.
- Minimum 2-3 years of solid working experience in a high-volume sushi restaurant or Japanese restaurant at a 5-star hotel.
- Being a certified sushi maker or having a relevant experience certificate of knife techniques, omakase training, and dashi preparations.
- Capability to work with minimal supervision and handle the high-volume pressure during weekends, public holidays, and the season.
- Following food preparation and HACCP standards.
- Intermediate English speaking skills plus understanding of Japanese is an advantage.
- Willing to work on flexible rotational shifts.
- A Good team player to work with different cultures in the kitchen.
Intercontinental sushi chef routine
Basically, in short, you will receive fresh seafood from the suppliers. Before accepting seafood stocks, chefs are responsible for checking the quality of the seafood: its color, temperature, and freshness. After the inspection, the duty in the kitchen will begin by removing skin, separating organs and bones, cutting the seafood according to Japanese standards, and storing it at the right temperature. Meanwhile, you will do mise en place, prepare vegetables and seasonings, make sauces, and prepare the sushi rice. These are the backbone of the day. Must be very careful when preparing sushi rice, including seasoning and pickling. When lunchtime arrives, room service orders and à la carte restaurant orders will ring. Once the brunch and lunch rush is done in the evening, prepare for the next day, restock, and portion items. Requests that are running low and regularly cleaning stations and equipment are a must. Aside from that, you will have to work special weekend shifts in the hotel restaurant, plus there’s a banquet event; you have to be prepared for bulk sushi production according to guests’ requests. These typically include a sushi chef’s day-to-day taste.
