The Sommelier will oversee the wine and sake service to ensure a smooth operation, with a focus on maximizing guests’ and members’ satisfaction.

Role Play

As part of our launch of a wine program at the restaurant of this highly acclaimed fine dining venue located within a prestigious Arts Club, we are seeking the services of a seasoned Sommelier with extensive wine management expertise. A successful candidate would possess broad knowledge of wine & spirits and be extremely friendly and positive.

An ideal candidate should be able to read the room as skillfully as their wine list. You will collaborate closely with the head chef, the restaurant manager, and the captain to ensure that every dish pairing and recommendation adheres to the same standards.

Core Responsibilities:

  • Curate, cultivate, and consistently improve the wine list across all club locations, blending high-profile labels with thoughtful, lesser-known finds.
  • Support members and guests in choosing wine or sake, and serve them in accordance with the standard operating procedures.
  • Monitor the entire wine and beverage inventory for procurement, for the relationship with suppliers, for the storage needs and for the costs in order to stay within the objectives of the budget.
  • Host and lead members for wine tastings, pairing dinners and other educational events throughout the year as part of the Club’s Cultural/Social calendar.
  • Make sure the wine and sake lists reflect current vintages and prices, and store all products properly in the cellar and on display.
  • Follow and monitor wine industry trends and emerging producers to keep the club’s offering distinctive.
  • Work closely with the culinary team in developing the seasonal menu to guarantee thoughtful and well-executed food and wine pairings.

Requirements

  • At least 4 to 5 years of experience as a sommelier or senior wine professional in a luxury hotel or fine dining restaurant.
  • WSET, Court of master sommeliers, or equivalent certificate preferred.
  • Must have strong organisational and time management skill.
  • Exceptional tasting abilities, paired with the confidence to offer insightful, instant pairing suggestions.
  • Good spoken English; additional languages are an advantage.
  • Genuine Passion for wine, gastronomy, and creating exceptional guest experiences throughout the day.
  • Schedules for events that comply with the club’s operating hours and calendar.
  • In-depth knowledge of international wines, grape varieties, regions, and food pairings.
