Commis III

How the Commis 3 Role Works

As a Commis 3, a bakery chef will take charge of several responsibilities of kitchen prep and production on a day-to-day basis under the supervision of senior kitchen staff. As day-to-day tasks, assist senior bakery chefs with bakery product portioning, preparation, mixing, and making dough according to the menu and ingredients, using exact portion levels. Your taste starts even before the bakery opens. To inspect the ovens and bring them to the right temperature, let the doves bake in them, and mise en place must be done before starting the operation.

The bites-and-trays bakery section is huge. There are a lot of bakery section staff. One of your responsibilities is to assist the bakery team with pastry items, bakery products, sweets, and cakes, while adhering to the menu and par levels for quantities. Make sure that you follow the company standards at all times.

Keep your workstation clean at all times. Station, tables, cutting boards, and utensils must be clean and sanitized before you start work. Following proper food-handling practices and proper storage at the right temperature is a must.

A Typical workday at Bites and Trays

Dubai’s bakery industry is competitive. Hundreds of bakers operate just in the Dubai region every single day, but they follow some rules to keep things running smoothly. Often, a bakery opens earlier than the restaurant. You will be there early according to the schedule and operation. One of your major responsibilities will be checking the production plan. Grab your utensils and start working on the mise en place assigned by the head chef. Check the oven temperature, take out the frozen items to prepare, portion items,s and make creams and fillings.

Working on the morning schedule has quite a lot of work to make doughs, croissants, vegetarian gourmet bite boxes, choco cake box, berry tart, protein bars, loaves,aves sourdough breads, etc. This will be one of your basic day-to-day work routines, except for deep-cleaning the pastry room and arranging stock items for the next day’s preparations. By the end of the day, you had done crafting, baking, and preparing the bakery products. Suppose there are any special requests for the event catering; that will hold you up a bit longer. This aside, that job truly requires a passion for working at a high volume under pressure, and it’s 100% rewarding if you keep working on it.

What you must bring to the table

As a commis 3 bakery chef, at least 1 year of experience in a hotel, cafe, or fast-paced restaurant in the bakery/pastry section, along with hands-on skillshands-on skills, is a must. You don’t have to be perfect, but in this role, prior experience is required.

Hotel school culinary (Pastry and bakery) or a relevant training certificate in food and beverage is required.

Passion and interest in bakery and culinary arts; a person who has a hunger to learn and grow by himself through this career; that kind of person is suitable.

Pay attention to detail in your area, following safety guidelines and hygiene practices.

Willing to work on rotational and shift schedules;d the candidate must be relocated to Dubai.

Physical health to lift weights, bend, and stand for long hours during the shift.

Being a team player to work as a family, not just in the bakery section, in general in the kitchen, and willing to work as a team.
