Shushi Chef Position

A position at the IHG Group Intercontinental as a sushi chef plays a major role in the authentic Japanese kitchen. This is a part of Japanese culture. This position requires a highly skilled expert to prepare authentic Japanese dishes, knowing that every ingredient, portion, and presentation capability by following food and safety methods and the IHG kitchen standards.

  • On day-to-day responsibilities, you will be in charge of portioning and preparing the seafood items according to the hotel’s high-quality standards. Preparation of gunkan,gemaki, uramaki, sashimi, sushi rolls ect will be on your daily checklist.
  • Maintain the quality and freshness of the seafood. Follow the temperature levels according to the international standards; following the hygiene methods plays a vital part here.
  • Prepare the sushi rice according to the menu standards and follow the quality consistently by cooking it at the correct temperature, seasoning the rice without fail, and maintaining the texture all day long throughout the dining service.
  • Preparing a large amount of maki rolls,chirasi bowls,shashimi and ect for the buffet service and special event for hotel outlets.
  • Prepare the garnishes, sauces, and ingredients. Mise en place will be your major part at the beginning of every shift. Additionally, keep the sushi station area clean and sanitized always.
  • Assist the storekeeper if needed when the goods arrive from the deliveries and organize them in the store according to the right temperature.
  • Stock reordering, following FIFO methods and minimizing wastages by following par levels.
  • Set up the banquet or hotel restaurant live action sushi set up and prepare sushi on the spot for the guest with presentable manner.
  • Assist the kitchen staff, including the Chef de parite, sous chef, and head chef, whenever required to help during peak hours.

Required Qualifications

Basically, a suitable sushi chef must complete the following qualifications:

  • Broad knowledge of preparing and making sushi, sauces, seasonings, ingredients, cooking methods, flavouring, including skills in knife and fish cutting, preparation of rice, and the authentic Japanese plated presentation.
  • Minimum 2-3 years of solid working experience in high volume shushi restaurent orJapanese restaurantt at a 5-star hotel.
  • Being a certified sushi maker or having a relevant experience certificate of knife techniques, omakase training, and dashi preparations.
  • Capability to work with minimal supervision and handle the high-volume pressure during weekends, public holidays, and the season.
  • Following the food preparation and HACCP standards.
  • Intermediate speaking English plus understanding Japanese is an advantage.
  • Willing to work on flexible rotational shifts.
  • A Good team player to work with different cultures in the kitchen.

Intercontinental sushi chef routine

Basically, in short, you will receive fresh seafood from the suppliers. Before accepting the seafood stocks, chefs have the responsibility to check the quality of the seafood. The color, the temperature, and the freshness. After the inspection, the duty in the kitchen will start to remove skin, separate organs and bones, etc., cut the seafood according to the Japanese standard, and store it at the right temperature. Meanwhile, you will do mise en place, vegetable preparations, seasonings, make sauces, and prepare the sushi rice. These are the backbone of the day. Must be very careful when it comes to sushi rice preparation with seasoning and pickling. When lunch time arrives, the room service orders and restaurant à la carte orders will ring.
